Homemade giant fettuccine with a white sauce and broccoli.
Pesto with whole wheat (store bought) linguini with peas and bruschetta.
Open-faced portobello sandwiches with pepperjack cheese, arugula, organic bacon on a whole wheat French baguette.

I've also been doing Thai curry, and proteins with French-style peas and roasted potatoes.. things like that. My new favorite thing is soft-boiled eggs. They're still ooey-gooey inside and I cut the tops off and dip asparagus and crusty bread into it. Deelish.
