Pumpkin Cookies

More cake-like than crispy-chewy cookie, but they're still delicious for a last minute Thanksgiving favor. They're the perfect bit of pumpkin flavor and not too sweet so you're not dying after eating all of that turkey.





PUMPKIN COOKIES

1 1/2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon ginger
1/4 teaspoon nutmeg
1/8 teaspoon allspice
1 stick butter, room temperature
1/2 cup sugar
1/2 cup brown sugar
1 egg, room temperature
1 cup pumpkin puree
1/2 teaspoon vanilla

Preheat the oven to 350

Mix dry ingredients in a bowl.

Cream butter and sugars 'til creamy. Add egg, pumpkin puree, and vanilla. Add dry ingredients.

Scoop out two tablespoons or so and place them on a cookie sheet a couple inches apart.

10 minutes!

Tammy's notes: These cookies are more cake-like than crispy and chewy. But they're the perfect subtle pumpkin flavor and purposely not too sweet. I push down the tops just a bit (with wet fingertips) because they don't spread much in the oven.
